3 T Veg Oil
1/4 Cup packed Mint Leaves or 1.5 T dried
2T Kosher Salt
6 garlic cloves or 1 T garlic powder
1 T Black Pepper
1 T Cumin
1 T Sugar
2 t Smoked Paprika
1 T Steak Seasoning
2 t Mexican Oregano
1/4 cup of lime juice plus some zest if using fresh limes
Couple squirts of Sriracha or your favorite hot sauce
1 whole chicken or 6-8 chicken thighs or breast or parts of your choice.
- Combine all ingredients in blender or immersion blender.
- Blend until smooth
- Cover chicken with marinade and let sit for at least 8 hours.
- Grill or roast chicken at 425° F until internal temperature is 165° F and golden brown and delicious. If using bone in skin on check out this technique.
