Setup your grill for 2 zone cooking with a direct and indirect heat sides. This can be done on a gas grill by leaving some burners off or low. The temperature in this area should be 225-275° F. In a charcoal grill put charcoal on one side of your grill.
Place chicken on indirect side. (If using, baste every 15-20 minutes) Cook for 60-90 minutes until chicken reaches internal temp of 150° F
Move chicken to hot side of the grill. Turn often and grill until 165° F and golden brown and delicious .
